Dinner!!

Last week we had a nice lunch with Shawn's mom at the Old Town Cafe in Bellingham, a place we have had some nice meals and get togethers at with friends and family alike. Shawn had a portobello burger, one of his favorite burger type meals. He wanted to have another, so we picked up some locally cultivated portobellos that night on our grocery stop and tonight we made a tasty meal with them...Homemade garlic buns with a roasted portobello, Shawn's fat and tasty homefries with Skagit Valley russets, and a red cabbage and carrot slaw studded with garlic and almonds...the carrots are courtesy of our Maine neighbor Sabra and the crunchy red cabbage courtesy of a little Whatcom County farm (perhaps some day it will again be from our own little tiny farm?!). The carrot slaw was really excellent! We dressed it simply with olive oil and some apple cider vinegar. Nice dinner!

Tomorrow night we attempt our first homemade tofu and tofu skins (also called Yuba). We bought a package of nigari at the co-op, it's the coagulant for making tofu. We'll make a fresh batch of soymilk tomorrow and then make the tofu and skins in the evening. Should be really fun and we've been wanting to try this out since last year we watched a great documentary about the use of soybeans in China (no, I'm not kidding and yes, we really did love it!) The yuba we will use in stir fries and some other adventures...not sure of what all yet. We have a date coming up with friends in a couple of weeks that will be "Chinese Night" so perhaps we can incorporate them into that as well??? Updates with many photos to come!
