Happy Birthday to Shawn!!!

Happy 39th birthday Shawn!!

After a month in advance of testing out cakes, there was no cake on the actual birthday dinner night. We are heading down south tomorrow for a long weekend with the family, so the Vegan German Chocolate cake will wait till then.

Dinner was homemade lasagna!! One of Shawn's all time favorites! I made fresh pasta dough and cut it into lasagna noodles, cooked up a big bunch of sweet lacinato kale and added tons of criminis and onions and garlic to the sauce. Lots of mozz in between the layers with seasoned okara instead of ricotta. For the top, a little grated Parmagiano Reggiano. This picture is of the unbaked lasagna. I wish I could get my pyrex pans spotless. Maybe some hot white vinegar and baking soda could scrub the baking marks off? Oh well, you'll just have to look beyond it!

It must have been the birthday love added in for extra that made this one of the best lasagnas I've made in a while. Happy Birthday Shawn!!
